ENVS 35000-01 TOPICS: FARMING THE FOREST: Be prepared to go outside and get your hands dirty doing something real! In this hands-on Learning-by-Doing experience students become employees of South Hill Forest Products, a student-run business specializing in the sustainable production of Non-Timber Forest Products. Under faculty oversight, students are completely in charge of production, marketing, food-safety, public relations, product R&D, etc. By the time they finish, students have acquired basic proficiency in the day-to-day operations required for making and selling maple syrup, different species of edible mushrooms, honey & other hive products, and more. In addition, students gain the fundamental biological, ecological and applied knowledge to work with all these organisms on your own in the future, or to help other people get started in getting food from the forest.
