Early Colonial Bread

Ingredients

Mix:       ½ cups yellow corn meal
             ½ cup brown sugar
             1 tsp salt
             2 cups boiling water
             1/ 4 cup oil

Let cool 30 minutes

Mix in separate bowl:  ½ cup tepid water
                                 2 T yeast

Add:      Yeast & water to corn meal mixture

Mix:       ¾ cup whole wheat flour

½ cup rye flour

4 ½ cups unbleached flour

Knead – place in greased bowl 50-60 minutes

Punch down – divide into 2 loaf pans

Let rise

Bake @ 375 for 45 minutes
