This is an intensive field-based experience providing an in-depth analysis of localized food systems as a component of the sustainability movement. We will examine the strengths, problems, and barriers to developing our regional food shed by exploring local agriculture and farming practices, food distribution and retail networks, consumer demand, food accessibility, as well as agricultural and land-use policy. Course includes field trips to local farms and food related businesses. 2 credits (Y, summer).
